Dr. Seema Vijay Medhe is a Lecturer at the ASEAN Institute for Health Development (AIHD), Mahidol University, Thailand. She holds a Ph.D. in Food Engineering and Bioprocess Technology from the Asian Institute of Technology (AIT), Thailand, and has completed postdoctoral research at both Mahidol University and Chulalongkorn University.

Her research focuses on food and nutrition biotechnology, sustainable food systems, functional foods, public health nutrition, and One Health approaches integrating human, environmental, and food system health. Her work particularly emphasizes underutilized legumes, bioactive compounds, food processing innovations, nano-delivery systems, sustainable aquaculture nutrition, and the intersection of nutrition, sustainability, and global health.

Dr. Medhe has contributed to multidisciplinary research spanning food science, environmental health, planetary nutrition, and sustainable development. She has authored and co-authored peer-reviewed publications in internationally recognized journals including Foods, Future Foods, Food Science and Human Wellness, Aquaculture, Animals, Marine Drugs, and Food Reviews International.

Her current academic interests include sustainable nutrition strategies, climate-resilient food systems, innovative functional ingredients, and evidence-based approaches linking food systems to primary health care and public health policy. She is actively involved in international collaborations, scientific conferences, academic training programs, and interdisciplinary research initiatives focused on sustainability and global health challenges.
